Stuffed fried tofu — squares of firm tofu split and packed with seasoned bean sprouts and carrot, dipped in batter and deep-fried into shatter-crisp pillows. Indonesian street snack with sweet chili.

Method

  1. Stir-fry shallots and garlic in 2 tbsp oil for 60 seconds. Add carrot, cabbage and bean sprouts; stir-fry 90 seconds until just barely wilted.
  2. Season with kecap manis, salt and white pepper. Stir 30 seconds; the mixture should still have crunch and shouldn't release water. Cool. Stir in spring onion.
  3. Slit each tofu square along one edge to create a pocket — be careful not to cut all the way through. Stuff each pocket generously with the vegetable filling, packing it firmly.
  4. Whisk rice flour, cornstarch, baking powder, salt and turmeric with the ice-cold water into a thin batter. The cold batter sticks better and produces a crispier shell.
  5. Heat oil to 180°C. Dip each stuffed tofu in the batter, letting excess drip off. Lower into the hot oil and fry 4–5 minutes, turning once, until deeply golden and the surface is crisp and slightly bumpy.
  6. Lift onto a rack. Serve hot with sliced fresh red chilies — Indonesian street style is one bite of tahu isi, one bite of raw chili, with no dipping sauce required. Or serve with a small bowl of sweet chili sauce.

Can Tahu Isi be made ahead?
Tahu Isi is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 15 minutes.
Is Tahu Isi spicy?
Tahu Isi as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.

Cultural Note

Tahu isi is the Indonesian street stand snack — fried in big pans of bubbling oil at sidewalk warungs, sold to schoolchildren and office workers as a 4 p.m. pick-me-up. The dish belongs to a family of stuffed-fried snacks called gorengan that includes tahu isi, bakwan (vegetable fritter), pisang goreng (fried banana), tempe goreng and risoles. Each gorengan vendor offers all of them; the customer points and pays. The biting of a raw red chili between bites is an Indonesian habit — the cold chili balances the hot grease.
