Silken tofu in a brick-red sauce of doubanjiang, fermented black beans, minced beef and Sichuan peppercorn — Chengdu's most exported dish, numbing-spicy and fiercely savoury.

Method

  1. Blanch tofu cubes in salted simmering water for two minutes to firm them — they will hold the sauce without breaking. Drain gently.
  2. Heat oil in a wok over medium-high. Brown the minced beef, breaking it apart, until the edges crisp and the fat renders — about three minutes.
  3. Drop heat to medium. Push beef to one side and fry doubanjiang in the oil for one minute until the oil turns deep red and the paste smells toasted. Add douchi, garlic, ginger and chili powder; thirty seconds more.
  4. Pour in stock and stir to combine. Slide in the tofu cubes and shake the pan to settle them. Simmer four minutes, basting gently with a spoon — never stir aggressively or the tofu shatters.
  5. Stir the cornstarch slurry and drizzle in while shaking the pan. The sauce will tighten into a glossy red coat. Repeat once if needed; it should cling to a spoon, not pool.
  6. Off the heat, scatter half the ground Sichuan pepper and the spring onion green. Spoon the remaining pepper across the top just before serving — the prickling top dose is what defines má. Serve over rice.

Can Mapo Doufu be made ahead?
Mapo Doufu is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 15 minutes.
How spicy is Mapo Doufu?
As written this recipe is medium-to-hot — typical of authentic China cooking. To temper the heat, halve the chili or remove the seeds; to push it further, add more bird's-eye chili at the finishing stage. The spice can be adjusted at any point during cooking.

Cultural Note

Mapo doufu was created in 1860s Chengdu by a pock-faced restaurant owner — má pó means 'pockmarked grandmother'. The dish's identifying duo is má (numbing, from Sichuan peppercorn) and là (spicy, from doubanjiang). A Sichuan cook judges mapo by oil colour: the brick-red oil pooling around the tofu is the signature, and a pale or thin sauce signals an under-fried doubanjiang. The peppercorn dose is the controversial knob — Chengdu locals load far more than tourists expect.
