Method

  1. Heat 2 tbsp oil in a heavy pot over medium. Fry the curry paste, stirring constantly, for three to four minutes until the oil splits out around the edges and the paste smells toasted, not raw.
  2. Pour in half the coconut milk in a slow stream, whisking. Bring to a simmer; the mixture will turn rust-orange and glossy. Add chicken legs and turn to coat.
  3. Add stock and remaining coconut milk. Simmer uncovered, partially covered, for 30 minutes — the chicken should pull easily from the bone but still hold its shape.
  4. Meanwhile, fry the reserved 100g of noodles: pull them apart, drop a small handful into 180°C oil, and cook 30 seconds until they puff and turn pale gold. Drain on a rack — these are the crisp top.
  5. Boil the rest of the noodles three minutes in salted water until just tender. Drain and divide between four deep bowls.
  6. Season the broth with fish sauce, palm sugar, and lime juice. Taste — it should be richly sweet, salty, with a curry warmth and lime brightness. Ladle over the noodles, top each bowl with a chicken leg, and crown with the fried noodle nest. Serve garnishes on the side so each diner builds their own bowl.
