Method

  1. Pound garlic and chilies together in a mortar until coarsely broken — keep some texture, not a paste. The garlic should look cracked, the chilies bruised and aromatic.
  2. Heat the wok over the highest flame your stove can produce until a drop of water vaporises on contact. Add oil and swirl; add the garlic-chili mash and stir for ten seconds until the garlic just turns straw-yellow.
  3. Add the minced chicken and break it apart with the wok edge. Stir-fry until the meat changes colour and the edges begin to caramelise on the metal — about three minutes.
  4. Add fish sauce, oyster sauce, soy sauce, and sugar. Toss vigorously so each piece coats; let the sauce reduce against the wok for thirty seconds until it smells slightly burnt and sweet.
  5. Kill the heat. Throw in the holy basil and fold through twice — the residual heat wilts it without turning it black. Transfer to plates over hot jasmine rice.
  6. In a clean pan, fry the eggs in shallow oil until the whites are bubbly and lace-edged but the yolks still run. Slide one over each plate and serve immediately.
