Hong Kong's iconic noodle bowl — thin yellow alkaline noodles with prawn-pork wontons in a clear shrimp-shell broth, the noodles served on top of the wontons to keep them springy.

Method

  1. Toast the prawn shells in a dry pot over medium heat for 90 seconds until pink and aromatic. Add chicken stock, sliced ginger, dried shrimp and (if using) flounder powder. Simmer 20 minutes; strain. Season lightly with salt — the broth is meant to be subtle.
  2. Combine minced pork, chopped prawns, Shaoxing, light soy, sesame oil, white pepper, sugar and minced ginger. Mix in one direction for one full minute until tacky. Refrigerate 30 minutes.
  3. Wrap wontons: place a teaspoon of filling in the centre of a wrapper, dab the edge with water, fold corner-to-corner into a triangle, then bring the two pointed corners together at the front and pinch — the classic Hong Kong 'goldfish' shape.
  4. Boil the noodles in unsalted water for 30 seconds (very fresh) to 90 seconds (drier). Lift out, shock briefly in cold water to lock the spring, then dunk in warm water again to reheat. This is the doubling-back method that gives Hong Kong wonton noodles their signature snap.
  5. Boil the wontons in another pot of water, three minutes — they float when done. Lift carefully into deep bowls, six per bowl.
  6. Coil the noodles on top of the wontons (never under — wet wontons turn the noodles soggy). Ladle hot broth around the edges, lay blanched gai lan on the side. Eat the noodles fast, wontons after, broth last.

Can Wonton Noodles be made ahead?
Wonton Noodles is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 25 minutes.

Authentic noodles are jook sing — dough flattened by a bamboo pole the cook bounces on; the technique nearly went extinct and has been revived in the past decade.
