Num Pang Sach Moan

Method

  1. Pickle the carrot and daikon: combine vinegar, sugar, salt and 60ml water in a jar. Add the shredded vegetables. Press down. Rest at least 30 minutes.
  2. Marinate the chicken: combine fish sauce, soy sauce, palm sugar, garlic, cracked pepper and lemongrass paste. Add chicken strips. Marinate 15 minutes.
  3. Grill or pan-sear the chicken over high heat for 90 seconds per side until charred at the edges and just cooked through.
  4. Warm the baguettes in a hot oven (200°C) for 4 minutes — the crust should crackle and the interior steam back to softness.
  5. Slice each baguette horizontally, leaving one side attached. Pull out a small handful of bread from the centre to make space for fillings.
  6. Spread pâté on one cut surface, mayo on the other. Layer in: grilled chicken, drained pickled vegetables, cucumber batons, cilantro stems, sliced chili. Press the baguette closed firmly. Eat immediately.
