Method

  1. Make the pandan-jelly worms: whisk rice flour, tapioca starch and salt with the pandan extract and 300ml water in a heavy saucepan. Cook over medium heat, stirring constantly, for 5 minutes until the mixture thickens dramatically.
  2. Have a bowl of ice water ready. Press the hot dough through a colander or jelly press over the ice water — the dough strands fall through and set into worm-shaped pandan worms.
  3. Refrigerate the pandan worms in the ice water until ready.
  4. Make the palm sugar syrup: combine palm sugar, water and pandan leaves in a small pot. Simmer 8 minutes until the sugar dissolves and the syrup thickens. Cool. Discard pandan.
  5. Warm the coconut milk gently with salt — never boil. Cool to room temperature.
  6. To serve: in each tall glass, layer 2 tbsp drained pandan worms and 2 tbsp cooked sago pearls. Drizzle 2 tbsp palm sugar syrup. Add crushed ice — to the brim. Pour cool coconut milk to fill three-quarters. Serve with a long spoon.

Cultural Note

Mont let saung is the Burmese cousin of Indonesian es cendol, Vietnamese banh lot, and Thai lod chong — all variations on the pandan-jelly-worm and coconut milk theme. The Burmese version adds sago pearls for additional texture, distinguishing it from the cleaner Southeast Asian cousins. The dish is sold from vending carts in Yangon and Mandalay, particularly during hot-season afternoons. Modern Burmese cafes have updated versions with fruit, ice cream, or coconut foam toppings.
