Burma's pickled tea-leaf salad — fermented tea leaves tossed with crispy fried garlic, peanuts, sesame seeds, fried split peas, tomato and lime. The most distinctive Burmese dish.

Method

  1. Drain the lahpet thoroughly. Rinse briefly under cold water to remove excess salt; squeeze dry.
  2. Place the lahpet in a wide bowl in the centre. Around it, arrange small mounds of fried garlic, fried split peas, roasted peanuts, fried sesame seeds, raw onion (drained), chilies and tomato — each ingredient in its own zone.
  3. Drizzle lime juice, fish sauce and peanut oil over the top.
  4. At the table, the host or each diner tosses everything together with chopsticks or a spoon. The textures merge: bitter-fermented tea leaves, crunchy fried bits, peanut richness, raw onion sharpness.
  5. Taste — should land sharply sour, salty, with a complex bitter-fermented depth. Adjust lime or fish sauce.
  6. Serve at room temperature, ideally with shredded lettuce on the side. Lahpet thoke is also eaten on its own as a stimulant snack — the tea leaves contain caffeine, and Burmese students study with lahpet at hand.

The lahpet itself is a prized regional product from the Shan State, traditionally fermented in bamboo cylinders for months. The combination of bitter, sour, salty, crunchy and umami in one dish is what makes it the most often-cited 'most distinctive' Burmese dish.
