Hainanese-Malaysian chicken-and-rice — whole chicken poached in ginger-and-spring-onion broth, the rendered fat used to fry rice in chicken stock. Served with three sauces and cucumber slices.

Method

  1. Pat the chicken dry. Stuff the cavity with smashed ginger, spring onion and garlic. Rub the skin all over with salt and sesame oil; rest 30 minutes.
  2. Bring a large stockpot of water to a low simmer (just bubbling). Lower the chicken in and ensure it's submerged. Poach at the gentlest bubble — never boiling — for 45 minutes for a 1.6kg bird. The Hainanese standard uses the 'three lifts' method: lift the chicken in and out of the stock three times in the first 5 minutes for even cooking.
  3. Lift the cooked chicken into ice water for 5 minutes — the cold shock makes the skin gelatinous and tightens the meat. Pat dry, rub with sesame oil. Reserve the poaching stock.
  4. Render chicken fat in a dry pan over low heat for 5 minutes. Add minced ginger and garlic; fry 60 seconds. Add rinsed rice and stir 90 seconds until coated.
  5. Pour over 600ml hot reserved chicken stock with pandan leaves and 1/2 tsp salt. Bring to a boil, drop heat to lowest, cover and steam 15 minutes. Rest covered another 10 minutes.
  6. Make the three sauces: chili sauce (blend chili, ginger, garlic, lime, salt, sugar with a splash of stock), ginger-scallion oil (heat oil to smoking, pour over minced ginger and scallion in a heatproof bowl with salt), and thick dark soy.
  7. To plate: chop the cooled chicken into bite pieces, leaving the bones in. Serve over a mound of the chicken-fat rice with cucumber slices and a small bowl of the poaching broth. Each diner dips chicken in their preferred sauce.

Cultural Note

Hainanese chicken rice is claimed by both Singapore and Malaysia — the dish came from Hainan (China) with migrating Hainanese cooks who adapted Wenchang chicken to Southeast Asian ingredients. Both countries make it superbly. Ipoh, Malaysia, is famous for its chicken rice with bean-sprout side dishes; Singapore's Tian Tian is the most globally-famous version. The Hainanese poaching technique — submerged in barely-bubbling water — is the signature; the meat should be slightly translucent at the bone, the skin gelatinous. Three condiments are non-negotiable.
