Method

  1. Steam soaked glutinous rice 25 minutes. Mix with warm coconut milk and salt; rest 20 minutes for absorption.
  2. Make filling: combine smoked fish, toasted coconut, chilies, garlic, belacan, salt and palm sugar.
  3. Soften banana leaves over flame. Cut into 20cm × 15cm rectangles.
  4. Place a layer of seasoned rice on the leaf. Add a portion of filling. Top with more rice.
  5. Roll the leaf tightly into a cylinder. Tie with kitchen string.
  6. Grill over charcoal 12 minutes per side; the leaf chars but protects the rice. Serve hot.
