Method

  1. Bake the beef bones at 220°C for 30 minutes to deepen the broth's flavour. Transfer to a stockpot with 2L cold water, halved onion, smashed garlic and ginger. Simmer 90 minutes, skimming. Strain. Season with salt.
  2. Cut the cold beef into chunks. Pulse-blend in a food processor with garlic, white pepper, salt and crushed ice until a smooth, sticky paste. The cold and ice are essential — they prevent the meat from heating up and breaking the protein structure.
  3. Add tapioca starch and baking powder. Pulse until just incorporated. The mixture should be sticky and smooth.
  4. Heat the broth to a bare simmer. With wet hands or two spoons, scoop walnut-sized portions of meat mixture and drop into the broth. The meatballs will sink, then float as they cook — about 6 minutes. The bounce is the marker of correct execution.
  5. Lift out the cooked meatballs. (At this point they freeze excellently for future use.) Bring the broth back to a simmer.
  6. To serve: divide rice vermicelli and egg noodles between bowls. Add 5–6 meatballs per bowl. Ladle hot broth over to cover. Top with fried shallots and spring onion. Serve with sambal, kecap manis, lime wedges and fried wonton crisps; each diner stirs in their preferred sauces.

Can Bakso be made ahead?
Bakso is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 35 minutes.
Is Bakso spicy?
Bakso as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.

The bouncy texture of authentic Indonesian bakso comes from the tapioca-and-cold-meat technique; commercial Chinese-style meatballs use sodium phosphate for the same effect. Bakso vendors push tinkling-bell carts through Jakarta neighbourhoods at dusk; the sound is unmistakable. President Obama mentioned bakso in his Indonesia visit, contributing to the dish's brief global moment.
