Method

  1. Score fish on both sides at 2cm intervals.
  2. Combine garlic, chilies, ginger, lime juice, salt, pepper, turmeric and oil into a paste.
  3. Rub all over fish, working into score marks. Marinate 30 minutes.
  4. Build a charcoal fire; let it burn down to glowing coals.
  5. Place fish directly on the coals. Cook 8 minutes per side — the skin chars; the flesh stays moist.
  6. Brush off any ash. Serve with lime wedges, rice and stir-fried greens.
