Gu Lou Yuk

咕嚕肉 (Gū Lū Ròu)

Cantonese sweet-sour pork — twice-fried pork shoulder in a glossy red sauce of vinegar, sugar, ketchup and pineapple, the dish that became Chinese food's most maligned ambassador abroad.

Method

  1. Marinate the pork in Shaoxing, soy, the beaten egg and a tablespoon of cornstarch for 15 minutes. The egg gives the crust its crackly puff.
  2. Roll each cube in dry cornstarch until thickly coated. Pat off excess; the coating should be uneven, almost lumpy — this is what gives the rough, crisp texture once fried.
  3. Heat oil to 170°C. First fry: lower the pork in batches and fry four minutes until pale gold. Lift onto a rack and rest five minutes — the cooling step is what allows the second fry to crisp without burning.
  4. Second fry: increase oil to 190°C. Return the pork in batches for one minute until deeply golden and crackling. Drain on the rack.
  5. In a clean wok with 1 tbsp oil, stir-fry the onion 30 seconds, then peppers 30 seconds. Add pineapple. In a bowl, mix vinegar, sugar, ketchup, soy and 100ml water; pour into the wok and bring to a boil.
  6. Whisk in the cornstarch slurry. The sauce thickens to a glossy red coat in fifteen seconds. Add the fried pork and toss vigorously for ten seconds — no longer, or the crust softens. Slide onto a plate; serve immediately with rice.

Can Gu Lou Yuk be made ahead?
Gu Lou Yuk is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 15 minutes.
Is Gu Lou Yuk spicy?
Gu Lou Yuk as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.

The dish travelled in the late nineteenth century with Cantonese migrants and became the staple of Western Chinatowns; the ketchup-heavy versions abroad evolved from limited access to vinegar styles. Rough, crackling crust and a sauce that pools rather than soaks is the marker.
