Triangular wheat-flour pastries filled with spiced potato, peas and crushed roasted coriander — deep-fried until golden, served with mint chutney and sweet tamarind chutney.

Method

  1. For pastry: rub ghee, ajwain and salt into the flour with fingertips until the mixture looks like coarse sand. Add cold water gradually until the dough just comes together — stiffer than chapati dough, almost like shortcrust. Knead 2 minutes only. Cover and rest 30 minutes.
  2. For filling: heat 2 tbsp ghee in a wide pan. Splutter cumin, then crushed coriander seeds. Add ginger and chilies; fry one minute. Add potatoes, peas, all the spices and salt. Mash and fold for 4 minutes — the mixture should be uniformly seasoned and slightly drier than mash. Cool, then fold in lemon juice and cilantro.
  3. Divide pastry into 8 balls. Roll each into a 18cm oval, 2mm thick. Cut in half across the short axis — each half makes one samosa. You'll have 16 halves.
  4. Take one half-disc, brush the straight edge with water, fold to form a cone with a 2cm overlap, sealing the seam well. Spoon 2 heaped tablespoons of filling into the cone.
  5. Pinch the open top of the cone closed in a flat seam — wet the edges and press firmly. The signature samosa shape is a four-faced pyramid; a poorly-sealed samosa bursts in the oil.
  6. Heat oil to 150°C — lower than for most frying. Fry samosas in batches at this low temperature for 8 minutes; they should turn pale gold and the pastry should bubble and develop the classic flaky texture. Increase heat to 180°C and fry another 2 minutes for deep colour. Drain on a rack. Serve hot with mint and tamarind chutneys.

Can Samosa be made ahead?
Samosa is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 30 minutes.
Is Samosa spicy?
Samosa as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Samosa vegetarian or gluten-free?
Samosa is suitable for vegetarian (and vegan if dairy is omitted) diets.
How hard is Samosa to make at home?
Samosa sits at intermediate difficulty — total time about 75 minutes. The ingredients are not unusual but the timing requires attention.

Cultural Note

Samosa is one of the great Silk Road exports — the recipe arrived in India in the eleventh century via Central Asian traders, who called it sambusa. Original fillings were minced meat; the potato version is a nineteenth-century innovation that followed the introduction of potato to India by the Portuguese. The Punjabi samosa is plump with potato; the Bengali shingara is smaller, with cauliflower and peanuts; the Gujarati version is cabbage-heavy. The low-then-high frying is the technical trick that produces the characteristic flaky-bubbly skin.
