- Heat mustard oil in a heavy pot until it smokes faintly — this destroys its raw pungency. Cool slightly, then add black and green cardamom, cloves, cinnamon and bay leaves. Wait for the spices to release fragrance, about 30 seconds.
- Add the mutton and stir to coat. Sear over high heat for 6 minutes; the meat should brown lightly, releasing some fat. Add asafoetida, fennel powder, dry ginger powder and salt.
- Reduce heat to medium. Whisk the yogurt with Kashmiri chili and ratan jot in a bowl, then pour into the pot in a slow stream while stirring constantly. Yogurt added too fast splits; stirring prevents this.
- Cook uncovered, stirring frequently, for 12 minutes — the yogurt will reduce, the oil will surface, and the colour will deepen to brick red. This step (bhuna) is what builds rogan josh's depth.
- Add 500ml water. Cover and simmer over the lowest flame for 60–75 minutes, stirring every 15 minutes. The mutton should be fork-tender and the gravy reduced to a velvety, oil-glossed sauce.
- Stir in garam masala. Rest covered 10 minutes off the heat. Serve with steamed basmati rice or Kashmiri naan; the dish is traditionally accompanied by a small dish of plain yogurt.

Rogan Josh is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 90 minutes.

'Rogan' means clarified fat or oil; 'josh' means heat or passion — the name describes the technique of cooking down the yogurt-fat-spice base over high heat. The deep red is from Kashmiri chili (mild, colour-rich) and ratan jot (alkanet root, used purely for colour). The Kashmiri version uses no onion or garlic — a Mughlai-Kashmiri purity that distinguishes it from butter-chicken-school red curries.
