Method
- Make the puri dough first: combine atta, plain flour and salt. Add warm water gradually, kneading 6 minutes into a stiff but pliable dough. Cover and rest 30 minutes.
- Make the halwa: heat 100g ghee in a heavy pan. Add semolina; toast over medium-low heat for 8 minutes, stirring constantly, until the colour deepens to pale gold and the kitchen smells nutty.
- Meanwhile, simmer 800ml water with sugar and saffron until the sugar dissolves. Pour the hot syrup carefully into the toasted semolina (it will splatter — be careful). Stir vigorously to prevent lumps.
- Add cardamom and the remaining 100g ghee. Stir for 4 minutes — the halwa should turn glossy, deep golden, and the ghee separate around the edges. Stir in raisins and almonds. Cover and rest off the heat.
- Roll the puri dough into 12 small balls. Roll each into a thin disc, 12cm across.
- Heat oil to 190°C. Lower a puri in; press gently with a slotted spoon — it should puff dramatically into a balloon. Flip after 30 seconds; cook another 20 seconds. Drain on a rack. Serve immediately on a wide platter with halwa in one bowl, channa masala in another, the puris on the side. Each diner tears puri to scoop up halwa and channa.
