Taiwan's pork-belly steamed bun — a soft mantou folded around braised pork belly, pickled mustard greens, crushed peanuts, sugar and cilantro. The night-market handheld that conquered the world.

Method

  1. For the buns: dissolve yeast and sugar in warm milk; rest 10 minutes. Mix into flour with baking powder and oil. Knead 8 minutes until smooth. Cover and rise 90 minutes until doubled.
  2. Punch down the dough. Divide into 12 balls. Roll each into an oval, 12cm long. Brush half the oval with oil; fold over so it's now a folded oval. Place on parchment squares. Rest 30 minutes.
  3. Steam in a bamboo steamer over rapidly boiling water for 12 minutes. The buns will puff and turn glossy white. Cool slightly before opening.
  4. For the pork: blanch pork belly 5 minutes; rinse. In a heavy pot, simmer with soy sauce, Shaoxing, rock sugar, ginger, spring onion, cinnamon, star anise and 600ml water for 90 minutes. The skin should jiggle, the meat fall apart at a touch. Slice into 1cm-thick pieces.
  5. To assemble: open a steamed bun (the pre-folded line opens like a clam). Inside place a slice or two of warm pork belly, a generous spoonful of pickled mustard greens, a sprinkle of crushed peanuts, a pinch of sugar, and a small handful of cilantro.
  6. Press the bun closed gently. Eat immediately; gua bao is hand-held, never knife-and-fork. The textural contrast — soft bun, fatty pork, sour-crunchy greens, crunchy peanut, sweet-bitter cilantro — is the dish's architecture.

Common questions

Can Gua Bao be made ahead?
Gua Bao is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 120 minutes.
Is Gua Bao spicy?
Gua Bao as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Gua Bao vegetarian or gluten-free?

How hard is Gua Bao to make at home?

Cultural Note

Gua bao — 'cut bun' — is the night-market signature of Taiwan, found in every yeshi (night market) from Shilin to Liuhe. The dish was supposedly created by Hokkien immigrants who adapted Fujian rou jia mo to local ingredients. London's BAO restaurant chain made it globally famous in the 2010s, but the Taiwanese version with pickled mustard greens and crushed peanuts is the original. The bun is steamed, not baked, giving the cloud-soft texture; folding (not closing) the bun is the design feature that makes it sandwich-like.
