Method

  1. Blanch each vegetable separately, keeping their textures distinct: long beans 90 seconds, cabbage 30 seconds, bean sprouts 15 seconds. Drain each into ice water immediately to lock the colour.
  2. Make the peanut sauce: stir-fry shallots, garlic and chilies in 2 tbsp oil for 4 minutes until softened. Cool, then blend with peanuts, palm sugar, kecap manis, tamarind, salt and warm water to a thick smooth sauce.
  3. Transfer the sauce to a saucepan. Simmer 5 minutes, stirring, until thickened and the oil starts to surface. Stir in lime juice. The sauce should be thick enough to drape over a spoon, not pour — thin with water if too tight. Cool slightly.
  4. Arrange the vegetables, potato cubes, fried tofu, fried tempeh, halved eggs and cucumber slices on a wide platter or in individual bowls. The presentation is the dish — distinct piles of each component rather than a tossed salad.
  5. Spoon a generous ladle of peanut sauce over the centre of each plate. Toss lightly to coat just before eating, or serve with the sauce on the side and let each diner dress their bowl.
  6. Crumble krupuk over the top just before serving — it shouldn't sit, or it goes soft. Eat immediately. Gado-gado is for hot afternoons; it's substantial enough for a meal.

Can Gado Gado be made ahead?
Gado Gado is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 20 minutes.
Is Gado Gado spicy?
Gado Gado as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Gado Gado vegetarian or gluten-free?
Gado Gado is suitable for vegetarian (and vegan if dairy is omitted) diets.

Cultural Note

Gado-gado means 'mix-mix' in Javanese — referring to the assemblage of vegetables, the dish has no fixed recipe. Each ingredient must be at its best: snappy beans, sweet potato, crackling tempeh. The peanut sauce is the unifier; a Jakarta vendor named Bu Inem makes a single famous gado-gado that's been the standard for decades. The Indonesian sambal kacang (peanut sauce) tradition extends to satay, gado-gado, ketoprak and other dishes — variations are subtle but each is regional.
