Ul Boov

Method

  1. Combine flour, eggs, sugar, salt, butter and milk in a bowl. Add warm water gradually, kneading 8 minutes into a soft dough. Rest 30 minutes.
  2. Roll the dough into a long rope; cut into pieces. Roll each piece into a thin oval or rectangle.
  3. Use a special ul boov mold or hand-decorate: press patterns into each piece (parallel cuts or geometric shapes). The patterns are decorative and traditional.
  4. Heat oil to 175°C. Fry each piece for 90 seconds per side until pale gold and slightly crisp.
  5. Lift onto a rack to drain. Cool completely.
  6. Stack the fried pieces into a tall pyramid: typically 3, 5, or 7 layers (always odd). Decorate the top and sides with sugar cubes, rock candy, dried curds and wrapped chocolates. Display at the Tsagaan Sar table; family members take pieces from the stack to eat over the holiday week.
