Method

  1. Combine half the coconut milk and all the stock in a heavy pot. Add galangal, lemongrass, and torn kaffir lime leaves. Bring to a slow simmer over medium-low — never a hard boil, which splits the coconut milk and dulls the aromatics.
  2. Simmer ten minutes until the broth is fragrant and pale. The galangal should fill the kitchen with a piney-medicinal scent that's instantly different from ginger.
  3. Add chicken and crushed chilies. Poach gently for six minutes — the chicken should be opaque and tender, not bouncy.
  4. Add mushrooms and the remaining coconut milk. Bring back to a bare simmer for three minutes; the broth turns ivory and gains body.
  5. Season with fish sauce and palm sugar. Taste — the broth should be creamy, salty, with a slow heat at the back. Pull from the heat.
  6. Stir in lime juice off the flame (heat destroys its perfume). Ladle into bowls, leaving the lemongrass and galangal in the pot — they're not meant to be eaten. Scatter cilantro and serve with jasmine rice.
