Taiwan night market's most-ordered dish — small oysters cooked into a translucent egg-and-sweet-potato-starch pancake topped with chrysanthemum greens and a sweet pink sauce.

Oyster Omelette

Method

  1. Make the pink sauce first: whisk ketchup, sweet chili sauce, miso, sugar, soy and rice vinegar with 100ml water in a small pot. Simmer 4 minutes until thickened slightly. Cool.
  2. Whisk sweet potato starch, rice flour, water and salt in a bowl until smooth and lump-free. The batter should be thin, like single cream.
  3. Heat 1.5 tbsp oil in a wide non-stick pan or flat griddle over medium-high heat.
  4. Pour half the starch batter into the pan, tilting to spread thinly. Almost immediately drop half the oysters across the surface, then half the chopped tong hao.
  5. Pour half the beaten egg over the top in a spiral. Let the bottom set and turn translucent — about 90 seconds. The starch will turn from cloudy white to translucent grey.
  6. Add half the bean sprouts on top. Flip with a wide spatula (or do a half-flip, folding one half over). Cook another 60 seconds. Slide onto a plate. Drizzle generously with the pink sauce. Repeat for the second omelette.

The dish has Fujian-Hokkien origins (Fujianese oyster omelette is similar but uses different greens) but the Taiwan version with chrysanthemum greens and the sweet pink sauce is distinctly local. The use of sweet potato starch (rather than wheat starch) is the technical signature; it produces the characteristic translucent gel texture that distinguishes Taiwanese o-a-tsian from Chinese hao jian.
