Hanoi's beef noodle soup — flat rice noodles in a clear broth simmered for hours with charred onion and ginger, star anise and cinnamon, ladled over thinly sliced raw beef.

Method

  1. Blanch the bones in boiling water for 10 minutes. Drain, scrub the bones clean — this single step is what makes the broth clear instead of muddy.
  2. Char onion and ginger over an open flame or under a broiler until blackened on one side, about 4 minutes. The blackening is the smoky note that defines pho.
  3. Combine bones, brisket, charred onion and ginger in a tall stockpot. Cover with 5L cold water and bring slowly to a low simmer (never boiling). Skim foam continuously for the first hour. Cook 3 hours.
  4. Toast star anise, cinnamon, cloves, black cardamom and coriander in a dry pan for 90 seconds. Tie in muslin and add to the pot for the last 30 minutes only — earlier and the spices turn bitter.
  5. Lift out the brisket at hour 2; cool, then slice thinly across the grain. Strain the broth through fine cheesecloth. Season with fish sauce and rock sugar. Taste — clear, deeply beefy, faintly sweet at the finish, the spices apparent but not dominant.
  6. Boil noodles 30 seconds; divide into deep bowls. Lay sliced raw sirloin across the top — paper-thin so it cooks in seconds — plus the cooked brisket. Ladle screaming-hot broth over to cook the raw beef on contact. Serve with the herb plate and lime; each diner builds their own.

Common questions

Can Pho Bo be made ahead?
Pho Bo is best made and eaten the same day, but the components can be prepped earlier — chop and measure the ingredients up to a day ahead, refrigerated separately. Final cooking takes about 240 minutes.
Is Pho Bo spicy?
Pho Bo as written is mild to mildly warming — the heat comes from aromatics rather than chili. Add fresh sliced chili or chili oil at the end if you'd like to push it spicier.
Is Pho Bo vegetarian or gluten-free?

Cultural Note

Pho emerged in Hanoi in the early twentieth century, fusing French pot-au-feu (the bones-and-aromatics broth idea) with Chinese rice-noodle soup. The Hanoi school is austere — clear broth, beef and onion only on the table, no sprouts or basil; the South Vietnamese (Saigon) school adds the herb plate, sprouts, and condiments brought south by refugees in 1954. Diaspora pho — Little Saigon, Paris, Sydney — descends from the Saigon style. The black cardamom is non-negotiable for authentic Hanoi flavour.
