Konkan-coast fish curry — kingfish or pomfret simmered in a coconut-and-tamarind gravy ground with Kashmiri chilies and triphala spice — the daily meal of Goa's fishing villages.

Method

  1. Rub the fish pieces with turmeric and salt; rest 15 minutes. The salt firms the flesh and the turmeric reduces fishiness — both essential preparation steps.
  2. Toast coriander, cumin, fenugreek and peppercorns in a dry pan over medium-low for 90 seconds until aromatic. Cool. Grind to a powder.
  3. Blend the spice powder with grated coconut, soaked Kashmiri chilies, turmeric, garlic, ginger and tamarind to a smooth thick paste. Add a splash of water if the blender stalls.
  4. Heat coconut oil in a heavy wide pan. Cook onion 8 minutes until just translucent and edged with gold; do not brown — Goan curries want the onion sweet, not caramelised.
  5. Add the spice-coconut paste. Cook 5 minutes over medium heat, stirring, until the oil starts to surface and the colour deepens to brick-red.
  6. Add coconut milk, slit green chilies, kokum petals and 200ml water. Simmer 5 minutes. Slide the fish in carefully; cover and cook 8 minutes — never stir, just shake the pan to redistribute. Taste; adjust salt and tamarind. Serve with steamed Goan red rice.
