Method

  1. Bring water to a boil with optional ginger and cinnamon (the highland Timorese variation).
  2. Remove from heat the moment it reaches a rolling boil.
  3. Add ground coffee. Stir. Cover.
  4. Steep covered for 4 minutes off the heat.
  5. Strain through a fine mesh into cups. Add sugar to taste.
  6. Serve with bibinka or biscoito Timorese cookies.
